Wake up on Christmas morning to the warm scent of these delicious Gingerbread Pancakes being cooked! With the perfect balance of ginger and cinnamon these are guaranteed to get you in the Christmas spirit!
What you'll need
1 cup Lo-Fo Pantry Plain Flour
½ cup gluten free self-raising flour
1 teaspoon baking soda
1 egg
¾ cup low FODMAP milk
2 teaspoon lemon juice
3 tablespoon golden syrup
2 teaspoon ginger
1 teaspoon cinnamon
pinch cloves

Process
Step 1
In a small bowl, whisk together the milk and lemon juice to make buttermilk and set aside.
Step 2
In a large mixing bowl, sift together the flours, baking powder and spices and whisk until evenly incorporated.
Step 3
Make a well in the centre of the mixture, and add in the buttermilk, egg and golden syrup. Whisk until a smooth batter forms.
Step 4
Heat a frying pan over medium heat and add a little butter to melt.
Step 5
Pour around 1/3 cup mixture into the pan. Cook until bubbles form on the top of the pancake and the edges become firm, and then flip using a spatula.
Step 6
Cook for about a minute on the other side or until golden.
Step 7
Repeat steps 5 and 6 until all the mixture is used – this should make about 6 pancakes.
