What you'll need
150g Lo-Fo Pantry All Purpose/ Plain Flour
15g salted butter
200g milk chocolate
½ cup caster sugar
½ cup brown sugar
2 tablespoon cacao
¼ cup almond meal
1 teaspoon vanilla extract
⅓ cup lactose free thickened cream
Preheat the oven to 160C and line a 23x23cm square baking tin.
Melt the butter and the chocolate together in a large mixing bowl in the microwave.
Add the sugars and eggs and whisk until smooth.
Sift in the cacao, flour, almond meal, and add salt and vanilla. Stir until smooth.
Pour into the tin and bake for 20 minutes or until the brownies pull in slightly from the edges of the tin.
Leave the brownies on a rack to cool, before cutting into 16 pieces.
Whip the cream and add a small dollop to the top of each brownie.
Trim the tops off the strawberries and place them on top of each dollop of cream to look like a Santa hat. Top with a tiny dollop of cream.
