Our delicious low FODMAP Lamington’s with Coconut Whip are perfect for afternoon tea or dessert! With a delicious blend of chocolate and coconut, these lamington’s are best when served with a cup of tea with friends. Made with our world first Low FODMAP plain wheat flour, these lamington’s will ensure you beat the bloat and avoid a sore stomach later! A great recipe to make with kids on the weekends or during the holidays, these lamington’s are hands-on and fun to bake! Melt dark chocolate and drizzle over the top to add an extra layer of flavour to these delicious sweet treats!
What you'll need
1 ⅓ cups (200g) Lo-Fo Pantry All Purpose/Plain Flour
2 tablespoons (16g) cocoa
⅔ cup (185g) caster sugar
¾ cup + 1 teaspoon (125g) butter, melted, cooled
1 (55g) XL egg, lightly beaten
½ cup (180g) raspberry jam
⅓ cup (40g) dark chocolate, chopped (40g)
COCONUT WHIP
2 egg whites, lightly beaten (72g)
⅔ cup caster sugar (185g)
1 ⅓ cups desiccated coconut (135g)

Process
Step 1
Preheat oven to 160°C fan-forced (320°F). Grease an 18cm x 28cm rectangular brownie/slice pan. Line base and sides with baking paper, allowing sides to overhang.
Step 2
Sift flour and cocoa into a large mixing bowl. Add in sugar and then egg and butter. Beat with electric beaters until mix is well combined.
Step 3
Pour mixture evenly into the prepared pan and bake for 20minutes or until base is firm.
Step 4
While the base is baking combine coconut, sugar and egg white in a bowl and beat with electric mixers until light and fluffy.
Step 5
Once slice is cooked and slightly cooled spread with raspberry jam and evenly coat with the coconut whip. Bake for 25-30 minutes or until golden.
Step 6
For some extra indulgence. Melt dark chocolate in microwave and drizzle over the slice. Allow chocolate to set and then slice and serve.
