What you'll need
280g canned corn kernels
1 ¼ cups Lo-Fo Pantry Plain Flour
1 large egg
1 teaspoon baking powder
¼ cup milk
Drain and rinse the corn kernels and add them to a large mixing bowl.
Add the flour, baking powder, salt and pepper and stir to coat the corn kernels.
Add the eggs and milk and stir until a batter forms. Divide into 8.
Heat 2-3 tbsp oil in a large frying pan and scoop the divided batter in to the oil, cooking until golden on one side.
