What you'll need
1 cup (140g) Lo-Fo Pantry All Purpose/Plain Flour
¾ cup (175g) water
½ teaspoon (3g) Bicarb Soda
2 teaspoon (14g) salt
2 teaspoon (6g) round Black Pepper
2 XL (110g) eggs
2 tsbp (30g) Olive Oil
Combine flour, bicarb soda, salt and pepper into a large bowl.
Lightly beat eggs and mix with water.
Add the egg mixture to the flour mixture and stir until smooth.
Batter can be used to coat fish, chicken or tofu.
Pan-fry on medium heat with a saucepan.
