Our delicious low FODMAP pancakes are perfect for weekend baking! Made with our world first low FODMAP wheat plain flour, these pancakes are certified low FODMAP to help banish the bloat! Double the recipe for brunch with the family or save the batter for later if you only want a few! Enjoy cooking these with friends and family and top with your favourite low FODMAP fruits and sauces for a breakfast full of flavour! What you'll need

1 ½ cups lactose free milk

1 egg

2 teaspoons vanilla extract

2 cups Lo-Fo Pantry All Purpose/ Plain Flour

¼ teaspoon bicarbonate of soda

⅓ cup caster sugar

25g butter, melted to grease the pan

Process
Step 1
In a medium sized bowl, combine milk, egg and vanilla and whisk.
Step 2
Sift flour and bicarbonate soda into a separate larger bowl and then stir in sugar. Add in milk mixture and whisk until combined.
Step 3
Heat a large non-stick frying pan over medium-heat. Brush pan with butter or spray with vegetable oil. Ladle medium sized pancakes (i.e. 1/4 cup mixture per pancake). Cook pancakes until bubbles appear on surface then turn over and cook until cooked through.
Step 4
Once cooked transfer pancakes to a plate and cover loosely with foil to keep warm. Repeat with remaining batter, remembering to re-spray the pan before ladling a new batch.
Step 5
Serve with maple syrup or lemon and sugar and enjoy!!
